Specialty coffee roaster Tailored Cafe has both physical cafes and an online coffee subscription service. Their focus is on a premium coffee experience coupled with elevated sweet and savory bites.
Planning of savory and sweet menus for multiple locations in Tokyo. We managed the full menu development process: from procurement, to photography, to on-site operations. We designed the menus for specific customer demographics. For Shibuya and Kitasando, we focused on attractive sweets with a light operational load. In stores with a large number of workers, such as Roppongi and Nihonbashi, we crafted healthy yet satisfying sandwiches & salads. We develop ongoing seasonal lineups well suited to the customers and staff.
We develop and regularly introduce a variety of products tailored to the seasons and to each particular cafe. These include our staple cakes and cookies, and also original scone sandwiches and custard flans. The recipes are simple and focused on expressing the qualities of each ingredient in a pure and authentic form. Above all, the products are designed to be enjoyed with Tailored Cafe's specialty single origin coffee. We crafted a menu that is sensitive to the customer experience by merging classic concepts with a modern simplicity. This comes together with high quality, sustainable ingredients.
We provide consulting services for the procurement, manufacturing planning, production and shipping of our own manufactured sweets. We create detailed inventory schedules for the cafes and management teams. Along with this we secure and negotiate with various vendors and external kitchens. In addition, we help to create sustainable, constant plans for staffing, development and operations.
The roasting team works with a variety of Single Origin beans; carefully balancing the flavors and aromas with the right level of roasting in order present the best characteristics of each. We created a versatile, color-coded label system designed to express this delicate intersection of roasting skill, taste and sensation.
To support communicating Tailored Cafe's vision of making high-quality specialty coffee accessible to a wide audience, we created stylish and informative promotional material such as posters, soft goods, cards and SNS media.
